Thermostats are a necessary element and they allow hot coolant into your heater core. I would replace it with a dealer supplied one.
You will ruin your engine if you operate without it.

If this doesn't work have the system flushed as a last resort. Pay a little more to have a dealer do it. Well worth it.

They will also check your rad cooling ability as well ad your heater core.

1995 ford windstar 3.8L when i turn on my a/c it starts to overheat temp gauge goes 3/4 the way almost overheating same timekeep hearing a clicking noise every 30 seconds or so.

My guess either radiator is clogged or compressor is bad or low on freon...u said its clicking every 30 secs? Check freon level with a gauge. Is the air cool? Sometimes though car will run at normal temp but with ac on and condenser heating up radiator can't keep up. Flush and/or clean and check radiator/condenser for flattened fins

My car is overheatting and i changed the thermostat/tempsensor/reservoir/waterpump/heatercore

(1)So it's really overheating and not just SAYING it's hot, right?Because the gauge CAN go bad in the dashboard.
Well, you didn't list the(2) electric fan, whether it's coming on or not? (3)And if the fan is working, the only thing left is a plugged radiator on a Taurus.
A plugged radiator is best serviced at a radiator shop or you can buy a new one at Auto-Zone fairly cheap(150.00 or so). (:^) don-ohio

2002 ford taurus. jerks terribly when accelerating from 40 to 60mpg. Mechanic just told us we had a cracked water pump. Can a faulty water pump cause the car to **** when accelerating?

This sounds more like a misfire problem then a waterpump issue. If the waterpump is faulty it should be replaced before any serious overheating issues occur and damage the engine. As far as the waterpump causing the car to **** would say not likely. Is the check engine light on? If so the codes the vehicle has stored would be a better way to get to the issue. Please feel free to ask any additional questions.

I have a 1999 ford taurus with the 3.0 sohc we have replaced the thermostat and the pressure cap and it still keeps blowing out coolant what else could be wrong?

I assume its overheating.
Ensure motor doesn't have tuning or mechanical problems (such as blown head gasket).
Check radiator core is not blocked,
Check operation of cooling fans.
Check the coolant system is correctly filled - any airlocks cleared (by bleeding as may be required).
Check radiator hose on suction side of waterpump not (soft) collapsing when engine speed above idle,
