You are going to need to get the gas gage sending unit replaced to fix this problem, the sending unit is located inside the fuel tank.

If my gas gauge doesnt work can it just be a fuse

Doubt it.
The same fuse for the gauge would handle the rest of the cluster.
Probably the sending unit in the tank.

I have a 2005 Mercury Sable that suppose to have a 18 gallon gas talk, but I can only get at most, 13 gallons of gas in it and it never will fill up. I have never been able to fill the gas tank up in full,...

With the gas gauge not working right, you have probably never let it get completely empty. And as far as the gas gauge goes, it's probably the fuel level switch. you can not purchase these separate from the sending unit. It would be a $500.00 + I would live with it untill the pump goes out, because this is part of the sending unit also.

Doorlock won't unlock / Gas gauge stuck

Do the doors unlock when you shut the key off? Also unhook the purple wire to the sending unit in the tank, Gauge should read empty. Ground the purple wire, it should read past full. If it works this way, replace the sending unit in the tank.

01 s10 gas gauge goes either full or empty

Sounds to be a faulty tank sender unit, these senders use a fine coiled wire on which a brush slides along to vary its resistance.
If the coiled wire breaks midway, the only readings will be full or empty.
I think sender unit is mounted to internal fuel pump on this model (top of fuel tank)
Hope this helps, regards
