Replaced water pump oil change coolant and all gaskets. Reset timing and now it won't start.. got spark and fuel .. cranks and no start
Because the water pump is driven by the timing chain, you obviously removed (or mostly removed) the timing chain. Having done this on the 2.7, I know it's very particular about the timing. A quick check to ensure your timing is correct is to do a compression test. It's pretty straightforward on this engine. If all your cylinders show good compression, it would give you confidence that your valve timing is correct. As Vernon Taylor suggested, you want to disable your fuel pump when doing this. Your coils will be removed, be sure they are disconnected.

In order to start an engine needs...
A good cranking speed.
The correct timing.
Compression.
The correct amount of fuel delivered into the cylinders.
A good spark at the spark plug at the right time.
If you have all those things the engine will start and run - it doesn't start so one or more of those things must be absent. Engaging in a guessing game is pointless - only you can decide which of those is absent and rectify the problem.
If you have been trying to start it for some time and the injection system has been working there could now be so much fuel in the cylinders and ports it is unlikely to start.
When you have rechecked everything and found it ok, you might find it useful to disconnect the fuel pump and crank it for a while with the throttle wide open...

SOURCE: 2006 Dodge Magnum keeps overheating
Observe the car's engine as it runs for 10 minutes to ensure that the electric fan for the radiator is coming on, if not either the fan relay, fan's coolant temp. sensor, or the fan itself is bad, try the relay first it is the least expensive, if this is the type of vehicle that has no electric fan replace the clutch fan.
