Check hoses going to heater core. Do both get hot? If so, problem may be a "blend" door failing to actuate due to vacuum leaks or bad actuator. If neither get hot, change thermostat.

The temperature gauge on my 2000 Jeep Grand Cherokee started running hot (about 3/4 up), as soon as I start moving (even when the car is cold). It comes down to normal (about 50% on the gauge) when I stop...

Change the sensor, but it will run hot like that if you are not moving fluids across it. It is basically measuring air temp for a minute. Could be a totally stuck thermostat. Change both. That cooling system is critical on a cherokee.

I have a 2001 Jeep Grand Cherokee. When I turn on the heat it blows cool air even after changing the thermostat.

most likely the little arm that moves the door is broken(common problem)
first you need to check that the hoses going to the heater are getting hot if they are both then the problem is in the dash

Air con / heater not working in my 2000 jeep grand cherokee no fan working no hot or cold air nothing

Your fan motor has most likely gone out. Its not that expensive of a part but most likely your problem. It can be a pain in the **** to fix though. Also, if you fix that and it still doesnt work, its likely to be a fuse, wiring, or something in the electrical system.

AC, not blowing hot air, only cold air

yes its true, because most probally the termostast is slipping from inside which casues the termost to stay on the same tempreture.
