Replaced transmission speed sensor. Replaced the plug that connects to the sensor by splicing the wiring. Transmission still slips, and hard knocking still occurs.

Typically when an automatic transmission begins slipping it is a sure sign the servo piston seals are failing. Due to the loss in application pressure the clutches begin to slip. The bouncing speedo may or may not be connected. As I recall the speedometer is driven off a magnetic sensor mounted in the output shaft housing.
Your best bet is finding a suitable low-mileage transmission at a wrecker and doing a swap, if you feel the vehicle is worth keeping.

Speedometer
The IPC displays the vehicle speed as determined by the IPC. The IPC calculates the mileage based on the class 2 vehicle speed message from the PCM. The IPC calculates vehicle speed based on the class 2 wheel speed message from the EBCM if a loss of communication or malfunction occurs with the PCM. The speedometer defaults to 0 km/h (0 mph) if the IPC detects a loss of class 2 communications with both the PCM and the EBCM.
As for the first problem it could be a speed sensor in the transmission. Do you have a check engine light on? You need to drive it with a scanner on it to check the speed sensor. If the sensor is reading fine but the speedo doesn't read right you likely need to replace the cluster. As for the second problem, this is a common one on the 4t65E trans. You need to replace the Transmission Pressure Control Solenoid.
Although you didn't mention it, the speedometer probably bounces also. Replacing the speed sensor on the side of the transmission should solve both your problems. Good luck
Replace the speed sensor, but also make sure you clear any codes, even if none are showing up, disconnect the battery for about 1 hour. After that drive it easy for a while, so it can relearn.
