Sounds like your new thermostat is sticking,They can be put in upside down. give it the stove and hot water test. It should show the valve opening about 72degrees Do not go above 80 degrees you'll cook it.

I have a 2000 Dodge Ram 4x2 Cummings diesel. My problem is that the engine is slightly overheating. If I Stay at 55 miles an hour it will run hot but not overheat but if I do the speed limit of 65 the...

diesels over heat from several things
1-- cooling system problems -- thermostat, fan clutch blocked radiator cores, head gasket
2-- fuel injection timing-- too far advanced
3--over fueling-- fuel control module -- faulty injectors --leaking seals
4--- dragging brakes
A simple test on the fan hub is when the temp is high , if you can stop the fan rotation , the hub needs replacing but as you have speed , the fan will not be operational as the wind speed through the radiator will overcome the fan requirement so that comes back to coolant flow
Blocked cores or core fin flaking off are problems here
lastly is the injection timing and rate of fuel flow are serious so I would suggest that you take it to a cummins specialist shop and have the fault codes read first as it could be a problem crank position sensor or injection timing control sensor

l could suggest you to check your engine thermostat if is working. if it is found defective, replace. some say, yes, could be the head gasket. it causes also of overheating. but smoke you notice at the tail end, could be you have broken valve seal and eats up the oil. this another problem makes the engine's overheating. the 25 old old engine really need an overhaul.

if you get an overflow through the resevior it's often times because the thermostat with stick shut causeing excess pressure. seeing is the car is not overheating this means that the trhermostat is opening but when you get that overflow it's sticking i would replace the thermostat as soon as possible to resolve this issue
