OBDII scanners are almost useless on these things things (DI's), trust me I've had one for like five years now. If you are uncertain about the engine temp get a cheap laser temp thinggy from Harbor Freight or what have you and point it at the top hose of the truck. temp should be at or below thermostat temperature or less, 190 degree F on a DI. Sound like a wiring problem or something having to do with your alternator, but I would be suspect of the alternator causing the engine to overheat.
I would first get a OBDII scanner (you can get a Bluetooth one on ebay for 15$) run that and look at your error codes. It sounds to me like you have a short that is causing your gauge to malfunction. There is nothing that would directly correlate the headlights or the e-brake with the temp other than the headlights causing a short that is the same when you pull the e-brake and the brake lights are causing the same type of problem in the wire harness.
