My car was over heating I went and change the thermostat it was shot. went back to normal.

I think that your engine may have seized up. If the new thermostat was installed in the correct direction, I believe that the radiator was plugged up, which caused the engine to over heat. But it could also be that the impellers in the water pump have eroded away. I have never heard of a sensor that shuts off the engine during an over heat event. Excessive heat may have damaged the new thermostat.

1998 beetle overheating and heat doesnt work

To start with, the cooling system is a sealed system, so anytime you have to add coolant it went somewhere. Either an external leak onto the ground, or an engine leak were the engine is burning it.
If you added coolant and the heater is not working all the time, the system could have air pockets which would need to be expelled.

2001 Oldsmobile Bravada no heat

You may have an air bubble in your coolant system. If so, use a large coolant funnel designed to purge out air bubbles. The funnel attaches to your radiator with cap removed. Check it out on line. It costs about $25.
