Is there a emergency shut off on a 2005 chrysler sebring

it would be the water temp sensor or the oil temp sensor both the engine read only for the engine management not the dash reading ones. if the engine overheats these are the first to go. then stop engine from starting.

Ambient sensor location

you are overheating. Check temp sender in block. Also make sure fan relay is operational in fuse box. Fans should come on after about 5 minutes of idle.

I think your sensor may be affective. The same thing happens to my sebring and it has been like that forever. You can check the oil pressure sensor and see if it needs replaced.

My engine light is on, and my car is overheating, how can i check if the problem is the thermostat ?

take the thermostat out, put it in a pot with water and heat the water, if it starts to open long before the water boils then the thermostat could be considered ok as long as it opens within the specified heat range.
To check the temp that it opens at you can put a cooking temperature gauge in the water to check the opening temp
hope this helps
