I have a 1991 buick regal with a 3.1 and when i start it it will run fine until it gets hot. when it gets hot it will stall out. if i try to start the car it will run rough. if i try to give it gas it will stall out.

Sounds like your car is overheating. If you have a temp gauge it should show that. If you just have an idiot light, by the time it comes on it's already too hot to operate. AFTER the car is cooled down, open the radiator cap to see how much coolant has been lost. Chances are there is alot missing. Add WATER (no sense in adding coolant if it's going to leak out) and idle the car at home. Look underneath as it warms up to find where the leak is.

It`s a 2000 buick regal ls. make sure when it gets hot eh fans are running. There is a coolant sensor just below the top radiator hose ON THE ENGINE. This sensor tells the fans when to go on when the engine gets hot and also serves as a low coolant sensor. unplug the sensor and replace it. use a open end or box wrench. if your quick you can replace it and only loose a few ounces of coolant. Then it has to be fuel, compression, or air. Check for fuel pressure first, if it has fuel pressure check for compression, must have a minimum of 100 pounds to run. Last check for air supply being restricted(very very very rare). if it has all of these and sprk it has to run as long as its timed right which is impossible to get out of time on a fuel injected engine like this unless someone mixed the plug wires up on the coil pack at which point it will be back firing out the intake and exhaust.
Have you done the basic maintenance. Spark plugs, oil change, ect.? As for the fans, if you have a/c one of them should only come on when your a/c is on. The other is regulated by a relay so when your car reaches a certain temp it kicks on.
if it runs on starting fluid its a fuel problem.. check fuel pressure even if its a couple of pounds off, the vehicle will not run. but using starting fluid may give you the extra poundage you need to make it run . also check vacuum hose at pressure regulator on fuel rail
