Check the fuel pressure at the fuel rail.
upgrade fuel injectors to a larger higher performance.
replace the fuel filter on the frame rail under the driver side of truck.
upgrade the coil pack to improve spark at the plugs in the combustion chamber.
replace spark-plug wires with high performance set.
have a mechanic perform a leak down test for acceleration issues.

Not certain it applies to the 2.3 engine but on the 3.0 V6 there is a simple and cheap mod known as the "throttle cable mod". Consists of adding zip ties around the excess cable length between the gas pedal and the cable termination. Doesn't add any power not there originally but it DOES allow the throttle to open completely which may not be happening if the truck is older and the cable has stretched with use. Took me 10 minutes on my '93 Xcab 3.0 auto and made a noticeable difference when I floored the gas. Good luck!

Keep a full tank of gas and the pump life may be slightly easier but forget about adding horsepower to a mule that way.
