Low Coolent light comes on when the coolent tank, either with a cold engine or normal running temp. The temp Guage does not show an overheat condition.
SOURCE: low coolent
sensor is in the coolant jug on right side of car. you will see a plug on bottom of tank this is sensor. A lot of times you can smack the jug a few times and this will jar the sensor it gets stuck sometimes. or pull off tank and clean out.

possible faulty water pump, not pumping sufficient fluid at higher engine speed. Also have the thermostat checked again if it was replaced properly. Hopefully this helps
Testimonial: "Very quick to help! Did not think of faulty waterpump at higher speeds. And yes, did have thermostat checked..hear a very common mistake! Thanks ;)"

a. check thermostat and temperature sending unit b. check coolant level! (this should be a.!)
start the engine ,let it warm up a little, take off radiator cap, should see coolant circulating in radiator- if it isn't after a reasonable amount of time, then your thermostat may be defective! if it is flowing, your temp. sensor may be bad- or, perhaps, a loose wiring connection.
these newer cars can make it difficult to actually see what's happening with the coolant, so no guarantees!
good luck!
SOURCE: low coolent temp. Check engine
that means you have low coolant in engine and or the coolant reservoir tank, or possible the low temp coolant sensor is bad
