Is engine running OK? If so and the muffler is an economy muffler, take it back to where you had it installed and see what they will do for you. If the engine IS NOT running right , it may be running to lean and tat causes an overly hot exhaust system. You may need to have the engine diagnosed for performance issues.

Baffle system? When exhaust gets red hot, usually means your catalytic converter is clogged, but, ive seen instances where a muffler had gotten clogged and was doing the same thing! Aside from the, air/fuel mixture being off could also potentially cause this!
Are you sure its the muffler....or is it the catalytic converter? It is not normal for wither to get cherry red - this usually means that you have raw fuel being burned in the exhaust stream. This is usually due to a burnt exhaust valve.
I have to agree with JL.. But, I would change the Cata. Converter. I belive the Cata. Convert. is old. Because, the Muffer ( New ) is hot! An I would give it an Old Fashon Tune Up. I know it do'nt it do'snt a Carb.. J.D.
You need to take it to a muffler shop and put it on a rack and determine what is rattling. Can be the heat shield above the catalytic converter that has come loose. Once you have it on the rack start the engine and then listen for the rattle.
sounds like a fuel management problem. the catalytic converter is getting to hot due to tryin to burn off the excess fuel not burned. causing the muffler to overheat get it scaned at autozone for free. sounds like a o2 sensor runnin lean dumpin more fuel. or a bad mass airflow sensor good luck
