Sparkplug gap should be .040.The trouble code P0161 is for a faulty oxygen sensor on the passenger side after the catalytic converter. The P0300 is a multiple misfire. It could be vacuum leaking around the intake manifold.

2 things come to mind, confirm you have proper fuel pressure, and if you've got a MAF (mass air flow sensor)
in the intake hose to throttle body, remove it, and spray it clean with Tuner spray cleaner, or electrical spray cleaner from radio shack or similar store, and then try it. Not uncommon for the MAF sensor to dirty and cause what your experiencing. If that doesn't cure it, start checking EGR and EVAP system.

I have a 2001 Dodge Stratus and awhile ago I switched the plugs to a Autolite plug. Then I decided there might a problem and went back to the Champion plugs.

I believe the factory originals are champion brand, and would have been platinum, but it should still run decent with the coppers. The only thing I can think of is they are of the wrong gap. Copper plugs do not come pre- gapped at all and need to be done by installer. The gap for your stratus, if it's a 4 cylinder is .050. Wrong gap will cause no power and shaking. Correct champion number in copper is #443, and should say that on the box/plug.

1998 Sunfire 2.2 litre, pulled the old plugs out (AC Delco originals) and noticed the gap on all four to be between .40 and .42, I was getting phenomenal gas mileage, power and acceleration wasn't too bad....

If the AC plugs worked, I would stay with the them, and use the same gap. .060 gap is a lot, especially for an old ignition system. If you keep the Champions, gap them to .045. Personally, I never had any good luck with Champion plugs. I normally use only Autolite. The new Autolite Iridium gapped at .040 should make a big improvement as compared to the Champions.
