First thing is find out if the oi pressure is really high. Remove the oil pressure sending unit and hook up a oil pressure test gauge kit, if the pressure is within normal then replace the sending unit first. (requires a special socket)

Adding fuel to the fuel tank is absolutely unrelated to to any change in engine oil pressure.
The oil pressure will be higher when the engine oil is cooler and lower when the engine oil has warmed up.
If you are experiencing abnormally high oil pressure on start up I suspect you are running the incorrect type and grade of oil in the engine. Only use the oil specification(type and grade) listed by the manufacturer for your engine and nothing else.. If you are unsure what that is then it is specified in your owners manual for the vehicle.

cold oil is thicker, higher rpm=more pressure .factory guage is actually working like it should. if worried hook external guage on oil galley plug and check oil press.manually.
The only time I've ever seen an oil filter gasket pop out on startup is when the gasket from the old filter had stuck on and the filter was thus installed with two gaskets. If that isn't the problem, It sounds like the oil pressure bypass valve is stuck and the pressure is building WAY too high. If you have an oil pressure guage, it would read very high.
sounds like your sending unit needs to be replaced cheap fix and if your oil pump losses all its pressure you will begin to hear knocking coming from your motor from the top under the heads.
check your pressure with an external gauge if you really do have high pressure then you pressure relief valve on your pump is stuck not easy on your seals but as long as it isnt fluctuating( pumping all of your oil out of the pan before more can trickle back into it) or not over 85ish youll be fine. check for sludge of foriegn objects, it might just be stuck but it may have something stuck in it. if your gauge is wrong its probably a short, you should look for frayed wires but youll probly have to wait for something else to go before youll find it
Check the sending unit wire for grounding, You may have a bad sender as well. If the problem persists, put a mechanical gauge on it and check actual pressure...that will tell you if you need to go inside the engine to fix it. Usually you will find the problem in the sensor.
DIAL IN CAB COULD BE AT FAULT, NEED TO GET ANOTHER DAIL GUAGE AND CONNECT TO SENDER, IF SAME COULD BE SENDER, IF STILL THE SAME, PRESSURE VALVE IN BLOCK STICKING DUE TO DIRT OR U/S, OR AT WORSE !!! ENGINE WORN, THIS WILL BE CONSTANT IN MOST CASES, FAULT IN GUAGES ARE NORM INTERMITANT.
