Hi,
If you are receiving to much fuel through the carburetor then it is the float levels in the carburetor that need resetting.
If its to much delivery to the carb. then you need to check if there is a fuel pressure regulator inline with the fuel line from the fuel tank.
Have this reset and this should solve your problem.

79 spitfire stalls when hot

Could be a number of issues. Obvious ones are location of the fuel feed line to the carburetor. Make sure the line is away from the back of the cylinder head. Second one is that the gas cap rubber gasket is plugged. Pop the gas cap when the car dies and if you hear a rush of air, your cap is not venting. Try starting again. There can also be issues with your hose routing to the charcoal canisters on USA vehicles.

Why do I have to pump the gas pedal to get my 1991 Nissan stanza to start

You probably have a carburetor that feeds fuel to the engine rater than Fuel Injection. Fuel Injection squirts a bit of fuel into the ignition chamber when you turn your key, allowing the car to start, with a carburetor, you have to manually pump the fuel into the ignition chamber to start the engine. Usually Two to Three times should be enough.

WILL NOT START UNLESS I PUT GAS OR STARTING FLUID IN CARBURETOR RUNS BUT WILL NOT IDLE CUTS OFF.

You need to pull the fuel line from the carburetor and watch for fuel flow as someone cranks over the engine. Sounds as though the pump has gone out or possibly just blown a fuse.
