Is the security light flashn after it dies?prob Pass lock. Google s10 pass lock...... Check your pump by clamping return fuel line an if it helps your fuel presssure low. May needa pump.
If I'm not mistaken it takes more pressure to crank than to run.
If you spray starting fluid in the air intake, does it stay running? I would go to harber freight and get a cheap fuel pressure tester and hook it into the fuel line. It hsould be about 40 psi, and hold for about 30 minutes after shut down without bleeding down too much, like 5 psi.
Try this too. Turn key to ON, wait 5 seconds for the pump to shut off. Then turn key off and listen for the realy to "Cclick" under the dash (about 10 seconds). Repeat this. Then start engine. This primes the lines & injectors if you are getting bleed down due to a bad check valve in the fuel pump.

If it has injectors it has a ecu, if it has an ecu it has a diagnostic port (normally under the drivers/passenger dash) if you look down at seat botton level you should see a small black port) You can go to any auto zone or parts place and they will scan it for free. You may have a head gasket issue with overheating or your cooling fan(s) may not be turning on. Check the codes first
Sounds like the injectors may be bad or just really dirty. You say that the truck is only used as a plow truck, so I would assume that it sits alot. If you dont add any fuel stabilizer to the tank, the fuel will start to degrade and the will gum up your injectors. One thing you can do is to pull the air cleaner assembly off and look at the injectors while the truck is running. Look at the bottom of the injectors while it is running. The injectors shouldbe spraying fuel with a fan spray of fine mist. If you see any drips of fuel in the this fine mist, that injector is at least dirty or on its way out. I would recommend that you change your fuel filter and then get some fresh fuel and the purchase some Seafoam fuel injector cleaner from your local parts store. Dont mess around with anything else. GET SEAFOAM. If it is in a plastic bottle it is not strong enough to do anything. Seafoam is in a metal can. Dump the seafoam in and run the truck as much as you can. This will help clean out the injectors.
