Are you loosing coolant ?
You need to pressure test the cooling system first, with a cooling system pump, (available at any good Car Spares Shop) to test for and eliminate any leaks, and go from there !
Also have the head gasket tested, with a Carbon Monoxide gas test, on the cooling system.

Have you noticed if the fan that is normally always on when running the AC comes on during this overheating or is it quiet?
You can listen to the noise it (should) make by turning on the AC and kind of recording the additional sound of the fan.
If the engine is hot and the AC is off, that fan should be running or at least it is set up that way in most cars.
If it isn't turning on to increase the air flow over what the other fan produces, then the temperature sensor has probably failed.
For the sake of your wallet, I hope the first answer is too pessimistic then that is a fairly expensive repair whereas the thermal switch/sensor is fairly cheap and quick to replace.
