The temp is controlled by electronics that monitor the oven sensor.
The sensor should ohm out at 1100 ohms.
If it is shirted to frame or open the open temp would not do right and the
oven control would not know what the temp was and would probably declare an F-3 error.
In your case I don't think that is the problem. What i think it is going to be is the ignitor. If it is getting weak it sometimes won't draw enough amps to open the safety bimetal inside the gas valve.
Probably the ignitor is on it's way out.

Stove wont turn on

Could be a bad burner or a bad mechanism on the temp control. The burner can be removed usually by pulling straight away from the direction it plugs in to. Keep it horizontal while pulling. There will be a little resistance. You can take the burner in to an appliance shop to have it checked. If that isn't the problem, then it's probably the temp control mechanism. If it's really the oven that doesn't work and it is a digital type, try pushing the bake touch pad, then adjust the temperature, then push the bake touch pad
again to engage the oven.

Oven temp will not change

Most ovens have BAKE, BROIL and yours might have CONVECTION. Turn each on independently. If all don't work its one problem if only one doesn't its another
Also is it the gas doesn't ignite or it ignites then no temp change (or electric gets to xx degrees but doesn't get hotter?

2 problems! Sometimes the lower oven doesn't start. U can hear the motor humming kinda but when I spin the blower wheel it'll start up and ignite. I've tested the capacitor and good. Any idea?...

I am not sure how you tested the capacitor but your issue is a classic one for a bad capacitor. The second problem is not very clear. With that being said, the wire could be grounding somewhere other than the ignitor. Please clarify a little more and I will help you work thru this.

Our frigidaire range oven is not able to hold temp...if I set it to 350 it may go as high as 550...but it doesn't always rise that high but it never goes to the temp set or stay at it.

Hi

This means a loose/broken wire on the oven temp sensor or the oven temp. sensor itself is bad and should be replaced. To solve this issue test the oven temp. sensor, it should read between 1080-1120 ohms, if the rating is more then that and the door appears to be closing fine then it is the control board that is bad and should be replaced. Usually these issues found when there is an EMI problem.Re-route the thermocouple wire and then try it.
2. If there is an microvave leakage in the oven.Check the magnetron gaskets are in place and the oven door is properly aligned.

Oven temp doesn't stay constant

your clock/timer control board controls the oven. the switches control the top. if connects were a problem until you moved them to a certain position then replace ends. but your problem with the temp. is gonna be fixed by replacing your control board.

Are your door hinges bent thus keeping the door open slightly? this way the thermostat might click off.
