Although chippers vary greatly in size, style, and capacity, the knives they use are similar. They are rectangular in shape and are usually four to six inches (10-15 cm) across by six to twelve inches (15-30 cm) long. They vary in thickness from about one-half to two inches (1-5 cm). Chipper knives are made from high grade steel and usually contain a minimum of 8% chromium for hardness.

Meat, prepare to be tenderized!


Here are easy instructions on how to tenderize different kinds of meat:

Steak:
Wrap the meat between two layers of plastic wrap lying it on the counter.
If you want, before wrapping the meat, you can sprinkle a bit of kosher salt and ground black pepper on it, to enhance the flavor.
If you have a mallet start hammering on the meat with the tool. You will see it flatten and spread.
If you do not have a mallet you can just use a tin foil tube and hammer the meat with that.

Chicken breasts:

So, to summarize, any kind of animal meat (including fish and sea food) that can lie flat on some film can be beaten or hammered with a mallet or other tools, like a aluminium tube or a daikon radish. While whole birds and meats that need to keep their shape can be pierced and penetrated with a meat tenderizer characterized by small knives rather than a hammering head.

I think plastic is the best. Wood harbors bacteria, glass ruins your knives. Plastic ones can be cleaned well and they even can go in the dishwasher.

How much money should I spend on kitchen knives?


The most important kitchen knives are the paring knife, the cleaver, the fileting knife and the chef's knife. I personally use a German steel paring knife, which costs around $70, but you can spend as little as $20 and get an excellent knife that will do the job. On a cleaver you can spend a fortune, but you can find very good cleavers at around 10$(try at your local market).
On a chef's knife, the Prices for good knives range from around $40 to as much as you care to spend. I use a slightly smaller Japanese ceramic chef's knife and a German steel knife. As a filleting knife, I use a midlevel knife costing around $40. But there are excellent versions available for under $20.

Actually it is much simple than it sounds, you will only need 4 types of knives to have a complete set of kitchen knives. You need a chef's knife a paring knife a filleting knife and a cleaver, that's about it. You can perform almost any cooking task there is in the kitchen with those 4 knives.
