Imperial deep fryer model: IFS-40

I have a problem on 3 unit of imperial deep fryer model IFS 40. The problem come from the flame from the burner is red flame( not the blue flame). And I check the size of nozzle of the burner is 5.1. I check the manual i see that it is wrong size to use with IFS-40. Could you advice and solution?

    Fryer 4 Burner New thermalpile and gas valve clean. keeps booming on start up of main burner, orfices clean, pilot asembly good 1/2" infront of burners. Need gas pressure for manin header, pilot seems wide enough. Seems to fill burner area before ignition does shut of by temp and relights and booms at times above exhaust in flames. Think pilot is to far from burner Hood seems to pull pilot flame to forward of combustion tubs,I have manometer to check pressure on manifold. any sugesstions Helpful ?

    I can turn on pilot but When i go to turn gas valve on to the burner the blue flame on pilot gets smaller causing the flame of pilot to not heat the thermocouple keeps on switching off is there a low supply pressure

Sounds like the pilot is dirty,if you have propane gas this is your issue,replace the pilot either way.

Flame not going into heat tubes


Make sure the regulator assembly on the gas valve is for propane. Sounds like the gas pressure is too low and the flames aren't going into the burner tubes. Make sure they didn't install an appliance regulator on the back of the fryer. This is not needed as the fryer has a regulator on the gas valve. You can unscrew the cap on the regulator assembly and turn the plastic screw inside all the way in. DO not turn with alot of force. Easy does it.

Soot build up


Flame is Orange? If so, propane is "choked", not enough air. Remove burners, clean each burner hole with a same size metal dowel (coat hanger works well) flush out inside of burner with garden hose, hi pressure air through all holes to dry. Replace burners ONLY after also cleaning chambers and chimney (garden hose and long brush). Do not forget to clean pilot light area too.
Most Imperials are pre-set air intake. Check gas pressure if able, 3" NG, 10" LPG. Good Luck

WTF your pilot light might be out RUN LIKE HELL- air the place out then go back and re-light it.

Fryer coming on without turning thermostat on


Imperial Model: IFS-40.
The thermostat is either very far out of calibration or has failed, either case it should be relplaced. The Imperial Part # for the thermostat is 1175.

My imperial IFS-40 is burning the door


Is this fryer propane?It sounds like the baffles in the tank are clogged.If you remove a burner shine a light in the baffle,if you see alot of soot use a shop vac and clean it out.Let me know.
