Parts and a diagram can be found here: http://www.manfrottotripodparts.com/head804rc2-3.html

Silicon grease in very small quantities is the best lube to use. DO NOT use oil or liquid lubes like WD-40. These will flow and make the head messy and may "wash" the other lubes away.

Manfrotto 804RC2 Tripod head

Hi Shirley
-When you look at the center column you should see a small plastic 'nub' about 1/2" from the bottom.
-When raising the column in preparation to move to the horizontal position this must be depressed or it will not 'pass through' the top casting.
-Once this has occurred the column can be raised enough that it will then freely drop into the horizontal position.

The Pan Tilt Head cannot be removed from my Manfrotto CXPRO3

Extend the center column, there are 3 screws underneath that when unscrewed will allow the head to be tightened or loosened. The head is screwed on about 4 or 5 revolutions. You will need a flat head screwdriver. Take the center column out if you need to to be able to get to the screws.

The plate is stuck on the head of my 804rc2, maybe in backwards?

Yes, it would be really hard to put on and equally hard to get off. Make sure the safety lock is release and a flat blade screwdriver should pop off the plate once the primary lock is released.
