In order to get the firebox hot enough to deliver a 225 degree temperature to the meat cooking cavity I have to load the firebox up and as such the applewood burns up rather quickly. Wondering if raising the wood off of the heat source or laying the applewood inside the smoker where the heat/flame enters the cooking area might help. Please help.

Soaking the applewood in water will make the wood smolder more than burn, extending the burn time. Another tip is to use chunks instead of whole pieces of wood. The chunks burn slower than whole logs or half logs.

The best thing you can do is to buy a BBQ digital thermometer that you place in the meat during cooking. They have a heavy duty wire with a temperature probe on the end. Sear the meat directly over the coals (or hot side of a gas grill), then move the meat to a cool side and then insert the temperature probe and close the grill lid. Cook until it reaches desired temp, for me 125 degrees is perfect. The total cooking time is hard to judge as it depends on your grill cooking temp, but the digital thermometer takes all of the guesswork out of the equation as to when the meat is done.

I need to know the cooking times for my chicken


Use a thermometer and measure the chicken, keep track of how long it takes then you have the time it takes to cook that piece. It is always best to use a thermometer when cooking meat.

Generally I bake chicken at 350 degrees F. for 30 to 40 minutes. To be sure that the chicken bre asts are cooked thoroughly, use a instant digital Cooking or Meat Thermometer for the proper temperature of 165 degrees F.

How do I cook ribeye steak


on the grill! get yourself nice dryrub at your local food store and throw it the grill. i dont let my temp get higher then 300 i cook them low and slow!

You didn't give any specifics which makes it difficult to respond because there are many reasons why a Traeger grill might not heat to the right temperature.

One of the most common is problems is the outside temperature. If it's hot, the Traeger may overheat unless it is tended constantly. When it's cold, the Traeger may not get as hot as it should based on a normal setting and you may have to set it higher to reach the temperature you want.

Other reasons could be mechanical in that the hot rod may not be keeping the firebox as hot as it should or the fan may not be running as hard as it should to get the temperature to the right setting.

If your firebox has not been cleaned, ash will effectively insulate the fire, preventing heat from building up in the cooker.

Some people clean their Traeger thoroughly after every use. Some never clean theirs until something goes wrong. I clean mine after every 4-6 uses, depending on how long my cooking sessions have been.

If I've been cooking pork shoulder low and slow for many hours, I'll clean it more often than if I had grilled steaks multiple times for 15-20 minutes at a time.

Likely, if you're cooking in "normal" outside temperature of 60-80 degrees, your Traeger should be holding fairly close to the temperature you've set. If it's not then you may have a fan or hot rod problem and you ought to contact Traeger to set what they suggest.

How long do u smoke a turkey? this is the 1/st time i have used model # 810-7090-s


It depends on the weight and whether it's a whole turkey or just a turkey breast. In either case, smoking is a low and slow process, the can produce exceptional results.

If your smoking at a temperature of 225 -250 degrees and the bird weighs 10 lbs (at 30 minutes per pound) that would be 5 hours minimum). The most important thing to remember is that the internal temperature should be from 160 - 180 degrees to be fully cooked. 160 degrees may be a little on the rare side, so I'd shoot for 170 - 180. If you don't have a meat thermometer, invest a few $$ in an insta-read insertion type. An under cooked bird can cause serious health problems and make you sick as a dog.

Is meat placed in main grill or in attached box


The "offset" box is your firebox. This is where you will put your charcoal. The meat goes in the larger chamber on the grill. This type of cooking is known as indirect cooking where the heat source is not directly under the meat. A grill cooks direct with the heat source coming from charcoal or gas burners located directly under the cook grills. Smoker can really deliver some great tasting food. Be patient and learn the ins and outs of cooking with a smoker. The most important thing is to cook low and slow. try to keep your temps in the cook chamber around 225. I hope this helps.

How do I use this grill? Charcoal in the larger cavity and wood in the firebox???


I assume you have the model with the side firebox? If so, when smoking you have your charcoal and wood in the firebox and the meat to be cooked in the large cook chamber. This is indirect heat cooking. Your cooker is dual purpose. You can load the large chamber grates with charcoal and cook as would with a charcoal or gas grill (direct heat cooking), or you can cook low and slow using the smoker portion. The heat comes in from the firebox and into the cook area. Ideally the temp in the cook chamber should be around 225 while smoking meats in this manner.

Google "smoker forums" and you will find a group of guys will to help you learn to cook with a smoker and share cooking secrets.

I can't find anything in the instructions on the length of time it would take to cook a turkey. Only the temp. of he meat


This may be too late, but you can generally figure on about 20 minutes per pound at a grill temperature of around 300 degrees. This is where a good instant read meat thermometer is your best friend. Take the temp in the deepest part of the breast and in the deepest part of the thigh starting at about the 15 minutes per pound mark and then about every 15 minutes after that.

The reason you see so many comments on the temp of the bird rather than the cooking time is that some folks cook their birds at 200 - 225 degrees, and others at 275 - 300 degrees or even up to 325.

I cooked a 5.5 lb turkey breast yesterday and it was ready in about 90 minutes at about 300 degrees.

Low temperature


I have the same smoker but not this problem. Is it possible that you have not let the coal get hot enough prior to putting your meat in it. When I feel that the temp is not hot enough I try to leave a little crack with the lid to allow air to flow from bottom to top stoking the coal. When you get the nack of it, this thing cooks an awesome turkey.
