Check the Canon control panel that came with the printer (they are not the same from one model to the next) and check for a setting for 'Gray scale.' If you are printing only text, it should default to the black cartridge.

Black is not printing, I changed black ink cartridge, and I performed print head cleaning at least 6times still no luck. What causes black not to print?

Please check if the cartridge has been seated correctly. When you replace it it there should be a little click sound which confirms that it has seated properly.
Also, I hope you removed the thin cellphone covering from the ink pad. It is there to prevent drying up when the cartridge is packed for long storage. Check
If it still does not work then the print head is damaged which you have to replace it.

How ro avoid color cartridge while it is unrecognized because i wanna print using black ink only

Most printers firmware from the manufacturers have hard coded the commands into the firmwares program to see that the color and the black ink cartridges are inserted before the printing process can begin. Electronically the voltage check sums will not be correct until both ink cartridges are inserted thereby giving an error or not enabling the print process.

I have a full black ink cartridge and no color cartridge and it won't print - black and white text.

In the Printer properties
There is an option like:
Print in color Print in Black and white (it may be different wording for different printers)
Change it to print in B&W
When you get your color cartridge remember to change it back to color - Normally it should be left in color.
hope this will work for you

Canon MP150 consumes color ink when ''Ink Cartidge'' = ''Black Only''

In order to keep the printhead free of clogs, all inkjet printers 'clean' the cartridges (color & black) fairly often. In my experience, a printer that is used regularly doesn't need 'cleaning' as often as it is done since this is an ink-wasting procedure and one that keeps the orders coming in for new cartridges where the vast majority of the profit is. Printers used only infrequently do have a tendency to clog and produce the poor quality we all hate.
Epson printers have ceramic printheads (the models I know) which will last just about forever providing they are used regularly. In home use, they have an ugly tendency to clog and often cannot be restored to their otherwise excellent performance. Printers using the integrated printhead/cartridge are easier to keep printing but this system makes the replacement cost much higher and the manufacturing cost slightly higher.
While HP hardware and consumables were made in the US (outside San Diego), I knew employees there and the early integrated cartridges cost a whole ~ 85 cents to produce and $20-$30 dollars to buy at retail.
Printing quality has unquestionably improved but it isn't likely to get any cheaper.
