Question about Scotsman Ice Maker 600LB CM3 30inW Commercial Cubed Machine
There are lens on the bin that shoot a beam across if there is ice it stops the beam and tells it's full. It can also become covered with calcuim and also tells the bin it is full. I would clean these lens gently with a cacium remover. they make products for this. its like an acid that clean off the calcium without damaging your lens.

It is a set of eyes located in the very back right and left hand side where the ice drops into the bin. Take some ice machine cleaner and wipe down the eyes. You should be able to pull the holders out to get to them better.

Clean the bin eyes found in the back of the ice machine where the shoot narrows. Look on the left and right sides of the unit, you will see plastic vanes that are pushed into rubber grommets. Just pull the eyes out and clean with ice machine cleaner.
