Question about Power Acoustik PTID-4007 Car DVD Player
Sounds like the colorburst frequency is off.
I don't however have a schematic for this board
However somewhere not too far from that video out will be the circuit that generates the video.
This will usually be a 3.579545 MHz crystal or oscillator.
Close to this crystal will be an adjustment that usually looks like a Phillips screw head (very small though, and encased)
This adjustment will need to be tweaked either clockwise or counterclockwise until the color syncs up.
If you can provide good resolution snaps of the circuit board near the video out, or even better, near the colorburst crystal / oscillator pack then I can probably tell you where the adjustment is.
It's best to get a 12V source (like maybe a PC power supply or battery etc) to run it on a bench while making the adjustment. That way you can adjust til you lose color in both directions, and make your final adjustment as in the middle of where it loses sync in both directions.

Usually color production in units could be caused by a variety of things. The first being the media which was being played by the unit some media would automatically switch to black and white due to compatibilty issues between the player and the media.
Secondly when the cables are not properly connected they tend to produce black and white pictures check how well the cables can be fitted and fit it well. Thirdly the unit could have been shifted to be in the pal setup so look for the switch which controls pal and ntsc and push it to the ntsc part.
