I was looking through this Turbo fry service manual
just now and looks like these units use something similar to a Kanthal spark/sensor.
The spark/sensor does 2 jobs. Lights the fire AND monitors the flame. If grease and junk gets on the spark sensor it won't confirm ignition and declare the failure. So clean up that thing real good or replace it and see if the problem is solved. Get your parts and service manual for your model here

Have you tried inspecting/replacing the thermocouple? This is the thing you heat when initially lighting the pilot.

You may also have a stuck pressure valve, but that is unusual.

Pitco fryer pilot light wont stay lite

The thermocouple is bad or the pilot light is not adjusted to heat the thermocouple to the point where the safety shut off stays on.

Would Pitco 35C+ still heat if bulb/capillary of control thermostat breaks?

The unit will not fire up if the capillary of thermostat is broken or punctured because the thermostat's mechanical contact will remain open.

for the latest design of pitco frialator, the manufacturer added what they called the self-cleaning burner system.during start-up, ignition is delayed so that dust accumulating in the burner face will be removed once the gas build up on burner chamber ignites, it creates a weak explosion like sound.the next time you hear that during start up, the unit is cleaning its own burner, no need to worry.

Pitco Fryer is displaying CHECK SUM FAILURE - in almost 10 years, I have never seen this display - what is it????

Check sum failure is an error on the configuration of the computer board. You have to reset the computer board to factory setting to get rid of this error (if check sum failure appears every now and then on the display). Make sure that you have the list of your cooking parameters before you reset the board to factory setting. Any settings made prior to a factory reset will be lost. I have a used sg-14 pitco that i want to use outside for my family reunionsdo i have to use a large tank oflp or can i use a 30-lb tank when i light the pilot it will not stay lit when i release the button...

You can check the voltage generated by thermopile using a voltmeter. Set the voltmeter on milli-volt setting then heat up the thermopile. When properly heated, it can generate 500 to 750 milli-volts.

It sounds like you are not recieving a heat feedback signal. It may be as simple as cleaning your flame sensor, using a emery cloth/ scotchbright. Be sure that all gas is turned to the on positions. Also that any safty high limits are closed / reset.
