Question about Vulcan EF3 Deep Fryer

I two vulcun deep fryer one will not stay lighted nad i have changed the gas valve and thermo couple and will heat up to 350 degres an cut out flame it has to cool down to be light again the other one you havge to keep at 400 in order for it to get the grease hot and burnning the grease fast

Try replacing the mechanical thermostat, is the one that controls the oil temperature.

This is caused by a pressure problem. There should be an adjustment screw on the gas valve regulator. Also, make sure the pilot orifice has been removed and cleaned. There is also an adjustment screw on the gas valve for the flow of gas to the pilot.

Hello i have a J5 lincat fryer and the pilot stays alight but the burners won't connect (light) have replaced the thermostat and the thermo couple but still no joy any ideas on this not sure what to do...


Check if there is 500 to 750 millivolts across the thermopile wires; thermopile generates 500 to 750 millivolts if properly heated to energize pilot and main valve solenoids of the gas valve for pilot and main burner operation. If the voltage across the thermopile is good and all wiring connections are ok, I think you have to replace the gas valve.

I have an Imperial fryer model IFS-40 it keeps shutting off . I had someone look at it and they are telling me that i need to change the valve. I ask if he was sure that was the problem he said it could be...


I have worked on several of these fryers and I would say that it is the thermo coupling that is giving you the trouble. but I have seen these valves go out from time to time also.
but I would start with the thermo coupling first.

My suggestions,

take the electrical wiring off the terminals of the gas valve one at a time, and clean the contacts with a food grade electronics contact cleaner and degreaser. Make sure all wiring is tight, not loose fitting, and clean. The thermo coupler, or sometimes used thermopile (multiple thermocouples in one) generates a small amount of electrical current when heated. The oil residue on a gas valve's electrical contacts SHORTS OUT THE MINUTE CURRENT GENERATED not giving enough current to hold the valve open.

The next thing, how high is your pilot set? If the flame is not striking the thermo pile properly, if its not directally in the flame, it will not generate enough current to hold the gas valve open. Sometimes a dirty thermo pile just cleaned up with sandpaper will work again (accumulated material acts as an insulator)

If you have access to a very high end electrical meter that is capable of measurung MICRO AMPS (very few) then you should check the actual current ouput of the themo pile.

Another thing, the gas valve solonoid MAY BE DEFECTIVE! IF YOUR THERMO PILE is of the screw in type vrs screwed on type, remove the gas valve end, degrease the inside and also that of the thermo pile surfaces, then use the CLEAN errasser of a pencil to clean both the inside of the gas valve connection, and also that of the thermo pile contacts. NO ERRASSER RESIDUE CAN BE LEFT ON EITHER SURFACE! Do not touch these contact surfaces with your hands because even the resistance of the body oil on these surfaces can mean the differance between it working or not!

The thermo pile or a thermo couple generates a minute amount of current that holds the gas valve on.

PS: and that didn't even cost you a dime, I'm off to an emergewncy service call to fix yet another McDonalds deeping fryer (don't call them beeping fryers cause they beep either!!!)

You can not check a thermocouple by resistence. You have to check it by millivoltage when it is hot and sensing it should be above 500mv. I would be willing to bet that you have some type of particulate in the gas valve that is causing this problem.
