My favorite software to use with Windows for scanning is called FreeKapture 2.0. You can search for it on Google or download it from the following site: http://www.freewarefiles.com/FreeKapture_program_32165.html. You can find a manual for it online. It is a simple utility. You install it, attach a scanner to your computer, open the software, click "Scan", and then tell it to save it as the file you prefer.
Windows also has built in program called "Fax and Scan" which can be found under Start Menu>Programs>Accessories.
