Yes you can, it doesn't do harm because it has thick aluminum canister that store water inside. But if you worry about that it may harm your unit then it is worth drain the water and put it when you brewing coffee.

I now use soft, filtered water each day. The "descale" message still comes up every 60 days. Is descaling that frequently, normal?

yes you will still need to descale it
soft filtered water still contains minerals and calcium but in lesser quantities
if you wish to avoid descaling use distilled water or demineralized water

I usually use some white vinegar and water mix and run it through the system. Be sure to use just plain water for a second rinse.

My coffemaker doesn't hold the water and is coming out from the bottom

This is generally a non-fixable issue. I had this with at least 2 coffee makers. It would be best just to buy a new one.

Cuisinart 12-cup grinder coffemaker all gummed up

It is endemic to this unit - condensation builds up in the grind chute, which makes the grinds stick to the walls of the chute. Decalcifying with vinegar/water helps, but only in an indirect way - by keeping the inside tubing clean, decalcifying generally allows the water to flow through the machine without obstruction. Inside tubing that has calcium, lime deposits built up obstructs water, and makes it flow through the machine slower - when water flows more slowly through the machine, the machine steams off the water at a higher rate, hence more condensation builds up in the grind chute walls.

Generally, i have found all Cuisinart coffee and espresso makers to be high maintenance to a greater or lesser extent, but the Grind-n-Brews have the highest cleaning/maintenance requirement.

What is the best way to clean my cuisinart coffee maker?

Cuisinart Coffeemaker Decalcification Process

Run 2 cups distilled white vinegar and 2 cups water through the system - brew it like it was regular coffee. Then run plain water through the coffemaker to rinse the vinegar out and make sure the decalcification was successful. Repeat as needed. Don't forget to remove the charcoal water filters first.
