I have a sub zero 650. Anything I put in my fruit/veggie drawer freezes and there is ice behind the drawer. It seems to be freezing around the tube behind the drawer and spreads up and out.

DEFROST PROBLEM
The evaporator coil behind the cover on the back wall inside the freezer(fridge) will ice up under normal conditions. Every 8 to 10 hours for around 20 minutes the defrost timer (or in most newer models the electronic adaptive defrost control) will turn the defrost heater on to melt the built up ice. There is a defrost thermostat which prevents the heater from overheating the freezer by breaking the heater circuit when the temp reaches close to 32 degrees F. The entire cooling system shuts off during the defrost cycle and starts back when the timer advances through the cycle.

If this ice is not melted it will continue to build up until the air can't flow over the coil to circulate the cold air through the freezer and into the fridge. The temperature change in the fridge is usually noticed first followed by the freezer.

If the defrost thermostat is bad, it can prevent the heater from coming on OR it won't turn the heater off when it gets too warm. It is clamped to the evaporator coil at the top to sense the temp. If it appears to be misshapen it is bad.
With an ohm meter it should show continuity when cold and none when warm.
You can also bypass(disconnect the two wires plugged into it and twist them together) the thermostat to see if the heater comes on then. If it does then you know the thermostat is bad and needs replaced.

The defrost heater is located on the evaporator. It is in a tube which is at the bottom and can also go up the sides of the evaporator. On some types you can see a burnt spot if it's bad. With an ohm meter it should show continuity from end to end when disconnected from the wiring in the freezer. You can also test the wiring for voltage when it's in the defrost mode.

If you have a defrost timer you can test it. It can be located under the fridge behind the kick panel on the front. Some are in the fridge with the controls at the top. You can turn the defrost timer till it clicks and everything shuts down. The heater should now come on. If it does, replace the timer because that means the timer is not running. If it doesn't, check the heater and defrost thermostat. Turn the timer again till everything starts back up to end the defrost cycle.

If you have an adaptive defrost control instead of a timer, replace it if the heater and thermostat test good. It is located in the fridge with the controls in some models and on the back in others.

Where do I put cold cuts and meats I don't want to freeze?

Best place for cold cut meats is the bottom drawer in the refrigerator. It's also good for cheeses. That drawer is the coolest but not freeze place. The upper two drawer are good for veggies and fruits. We put the lever controls in the middle selection for them.

sub zero are vey expensive, and sometimes tough to diagnos, but judging by your description, i would inspect your door seal, make sure it is closing and former a good seal all the way around
the best way to handle this, is to turn it off for the day, and let it defrost for 24 hours,

Large ice block is forming behind the fruit drawer.

i assume you have a model 650 or 550. Your drain line has clogged then frozen. You need to defrost the ice then clear the drain line. I usually knock a majority of ice away then defrost the rest. Once you have defrosted the line you need to clear it. I use high pressure nitrogen to blow them out, but a turkey baster will do just fine. Fill the turkey baster with water, disconnect the drain line from the drain trough. While holding the baster into the drain line squeeze the bulb to force the water into the line. It may take a couple of tries. Reconnect the drain to the drain trough and you should be all set. If you let this go too long the insulation may be saturated and you will have to have a tech install a drain tube heater kit. Clarkk I have seen this many times. Your drain is clogged. If you pull the drawers out and pull the top cover you will see the evap. On the cover you will find a nozzle that goes to the drain. Use some compressed air and blow out the drain. In some cases there will be some silicone that will need replaced. You can get a food grade silcone sealant at a hardware store. Hope this helps.

Sub-Zero 550 water dripping on right side of freezer forming ice on draw

I had a similar issue that started about a year ago with my Sub-Zero 550. My freezer gasket actually tore after several times of freezing closed. I thought that a new gasket would solve it, but a second but related problem developed where I was getting alot of condensation under the left side of the unit, with the water dripping onto the floor...eventually staining the hardwood floor in front of the unit.

I traced the problem to a clogged condensation drain pipe in the refrigerator. It is a corrugated pipe that drains a trough behind the crisper drawers. My pipe was clogged with black sludge and frozen down below. The condensation in the fridge would overflow out of the trough and leak below the crisper drawers, down out through the gasket.

To resolve, I used a piece of solid thin wire folded in half and twisted with a small loop at the end to fish out as much sludge as I could. Then squirted hot water into the pipe until it totally unclogged. I believe this will solve the problem without any need for a heater underneath the unit. The 550 worked fine for 4-5 years before this happened.

Sub-Zero 550 water leak and freezing

Seems to be a common problem with these units. You can get a drain tube heater ( got mine from an online refrigerator parts distributor), though may not totally solve problem. Some suggest running a copper wire through tube - supposed to conduct just enough heat to keep tube from freezing.

Sub-Z 550 reidge internal leak

The tube behind the crisper drawers is not insulated well enough and will repeatedly freeze, leaving the water to drain on your floor. The solution is to thaw the tube and put a piece of copper the length of your tube, into the area below. The wire extending into the area below is just warm enough to keep the tube from freezing.
