Somtimes using a charcoal grill can be tricky...are your charcoal briquetts fully lit and ashed over before yo start cooking...if so..the next trick is to get a good "draw" so the grill operates properly...you have to get air in the grill thru the botom vent and out te grill thru the lid vent at just the right rate to get a nice stream of smoke thru the lid vent without flaming up under the food. You have to make sure that you have the bottom vent partially opened to allow air to flow thru...remember air in thru the bottom and out thru the top....also try to use a good quality charcoal such as "Kingsford" because they burn longer than any I've ever used....It's a trial and error thing.....PS....don't try to relight by squirting starter fluid...This is very dangerous.... hope this was helpful..

I can't get the temperature high enough to go beyon warm, no matter how many briquets I place in the bottom pan.

Most of the time, it's not how much charcoal you use, it's how and where you place the charcoal pan for grilling and searing, as opposed to smoking food. The higher the charcoal pan in the grill, the more air it gets and the charcoal gets hotter. To illustrate this I have included a link to your Owners Manual (in case you have misplaced yours), to you can download and print for future reference. Pay particular attention to page # 9 - Grilling and Searing.

http://images.brinkmann.net/docs/pdf/810-5301-C.pdf

I would add to what your Owners Manual says about what type of charcoal to use, by suggesting that you use all natuarl lump charcoal, instead of briquette type charcoal. It the all natural lump charcoal is easier to light, without starter fluid. Plus, it burns cleaner and hotter than briquette type charcoal.

This should help you solve the issue you're having Happy Grilling!!

Kepping the tempeture right using wood

Hi, You would be better off using Kingsford charcoal and a few chunks of wood for the smoke. Last week-end I did an overnight cook (pulled pork) and the charcoal and wood lasted 14 hours at 225 degrees. Hank

Is meat placed in main grill or in attached box

The "offset" box is your firebox. This is where you will put your charcoal. The meat goes in the larger chamber on the grill. This type of cooking is known as indirect cooking where the heat source is not directly under the meat. A grill cooks direct with the heat source coming from charcoal or gas burners located directly under the cook grills. Smoker can really deliver some great tasting food. Be patient and learn the ins and outs of cooking with a smoker. The most important thing is to cook low and slow. try to keep your temps in the cook chamber around 225. I hope this helps.

WHAT ARE THE DIFFERENT PARTS OF THE CHAR BROIL H20 SMOKER NOT ELECTRICAL

Most of the small vertical smokers will contain, a charcoal pan, a water pan, and grills. That is about it for internal parts. The charcoal pan goes on the bottom and the water pan will go above that and then the grills. I hope this helps.

Was given a brinkmann gourmet charcoal smoker/no manuals

Sure...the smoker top and middle lift off. There is a pan that goes over the charcoal pit. The pan is used to create moist heat. It will produce steam while you cook. I recommend flavoring whatever fluid you put in the pan with fruit, fruit juice, or frozen concentrate, or wine, mixed with water. You can put your initial batch of charcoal in the bottom, (pit) and fire it up just as you would any charcoal grill. once the coals are ready, you can put the pan over them, put the middle section in, (with whatever meat you prefer), then finally the top. During cooking, to produce a smoky flavor, you can put water soaked hickory or misquete chips with the charcoal, it has a door for access. You can also add charcoal as needed to maintain the desired heat level thru the door. Remember, it takes longer to prepare food on the smoker, the key is low heat and longer cooking times. For example, I usually cook a boston **** at about 185 degrees for up to 12 hours. Bon Appetite!

Message to change filter but unit exhaust up to stack?

Grease filters change from the bottom side of the unit.

Charcoal filter is changed as follows:
To Remove Charcoal Filter
To remove the charcoal filter, disconnect power
at the main fuse or circuit breaker panel or
pull the plug.
Remove the top grille by removing the screws
that hold it in place and sliding the grille to the
left (opening the door makes grille removal
easier). Slide the filter towards the front of the
oven and remove it.
To Install Charcoal Filter
To install a new filter, remove plastic and other
outer wrapping from the new filter.
Insert the filter into the top opening of the oven as
shown. It will rest at an angle on 2 side support tabs
and in front of the right rear tab. Replace the grille
and screws.

With charcoal you light the coals and wait till they have turned white and the fire will have gone out by then but it will be very hot and will last an hour or more.

Grill Chef bbq not enough heat , goes up to 400%initially and back down to 250%. Has been cleaned thoroughly. Garbage?

if you want good constant hot fire change charcoal i switched from briqutes to lump or what they call natural charcoal i use royal oak but best choice also markets it. thing is they add starch to briqutes to make them stick together and burn longer thus reducing constant heat the natural lump charcoal work great for good hot fire ill assume your grilling steaks works great on them hope this solves problem
