Question about Weber SUMMIT S-620 Propane Grill
You cannot go from Natural gas to propane gas. The reason for this is because natural gas requires a larger valve orifice located on the valve spud.
The only way you would be able to retrofit back to propane would be to buy a new propane valve assembly with a propane hose and regulator.

According to Weber, "There is no conversion kit available to convert any Weber gas grill from one gas type to another. Any attempts to do it will void your warranty."
Sorry, but if it's any consolation, Propane Gas burns cleaner and hotter that Natural Gas in an outdoor environment. Which translates into faster preheating and hotter searing temperatures.

You will need to replace the orifices and install a propane regulator and hose. Plus, of course, you'll need to buy a 20# cylinder. I looked up your grill serial # and found a parts explosion for your grill. Here is the link: http://www.weber.com/PublicSchematic/view.aspx?model=6821001
If you click on the "additional parts" link, they have the conversion kits listed, but none of them are available anymore. As a propane guy, your best bet is to take it to a local propane co and have them convert it to propane for you. They will drill out your existing orifices and install spuds, and then re-drill smaller holes for the appropriate BTU rating for each burner. Then they can install the regulator and hose and even sell you a new and full 20# cylinder. Call around first and see which one can help you, as not all have serviceman that can do this particular job. Hope this helps. Douglas

On the weber model you need to purchase the natural gas model. It will cost you alot more to buy all parts needed to convert. Weber doesnt want you to convert do to safety reasons. This is why they will only tell you you can't convert. Buy the right grill and save yourself a headache.

You can buy a conversion kit for $150.00 from the Weber Parts center. However you don’t need to purchase a conversion kit. You can drill out the Brass Orifices with a 1/16 drill bit you should be good up to 15,000 BTU. You do need a Natural Gas hose/regulator. After that you should be good to go!
