Sounds like your running a cracked version of photo shop 7 as any anti virus shouldn't touch the exe file if was loading the correct binary code, cracked software alters the exe file to allow the software to run but the anti virus sees it as dodgy and deletes it.
Get a legal copy or one that's says it's clean from a torrent site.
