The low coolant came on one morning on my way to work. later that day i went and got all my fluids topped off. light went off. two days later the light came back on. for those two days that the light didnt come on was because i didnt drive it? can anyone help?

Your mechanic needs to figure out where the coolant is going. If it is not showing up under the car or on the floor mats in the car, then the problem may be either a leaking head gasket or in your radiator. If it is the radiator, coolant may be getting into your engine oil and this is very serious.
Changing the plugs probably had nothing to do with it. White smoke is usually a sign the engine is burning coolant or trans fluid. You might want to check those fluid levels. If the coolant is low, you may have a leaking head gasket or intake gasket.
Sounds like possibly a blown head gasket- that would explain the white smoke (usually an indication that coolant is being burned). . Do you mean the exhaust pipes sounded funny like drowning? If coolant is getting into the cylinders and being burned, some will not burn and get pushed in to the exhaust... Pull the sparkplugs out and check for evidence of water or coolant. A compression test will verify if the head gasket is good or not. Good luck.
You can reset the cel with the scanner-or disconnect the negative battery cable and leave it off for about 5 minutes-if it comes back on, you do have a problem and the code you get needs to be investigated. A low coolant sensor should not set a check engine light, what was the actual code (the number)?
heater core? do you have heat? is there coolant inside on the passenger floor? this 'seam' you are referring to, is it on the engine or on the firewall?
You can idle the car up to operating temperature to see if the cooling fan engages. there is a fuse for the fan, it's a 30 amp breaker located in the fuse panel mounted under your hood right on top of your battery. Your Owners Manual should have an illustration.
It may be a shift solenoid or a speed sensor look up the codes online google your cars year, make ,and model and be sure the fluid is not too low, check the fluid level warm while the motor is running.
It needs a thermostat and a coolant flush, in the worst case scenario a head gasket may be blown or leaking, have your mechanic do a coolant flush,thermostat, and leak check.
The only fluid expansion tank I know of is for the cooling system,and if that is the case you my have a leak in the transmission cooler that is built into the radiator.
