Can you determin if the paddle switch is clicking or not? I have seen more than enough of these that there is simply a frozen blockage in the discharge chute, have you checked this? Check the gears in the ice makers to see if they are broken or stripped. Also look to see if the ice rake is broken. All parts in the ice maker are replaceable individually, If you find broken parts replace them. The water line in the door can freeze also, just take a hair dryer and warm them up to see if this helps. Excuse me if I repeat myself or cover something you already told me, but I ususally have to go through my though process when thinking on these things.
Since you have ice and it is making it, then we know the water valve is at least halfway working, this is either the switch ot the control board.

My maytag mfi2568aeb french door bottom freezer has ice on coils in freezer and ice maker wont make ice

Sounds like the icemaker drain is clogged and the fill process overflowed the unit. the water then froze the drain and all overflowed water from icemaker. Remove icemaker and remove all ice from freezer and icemaker. Clean all drains. Reinstall.

The control panel on the door where I select ice or water will not let me select between ice or water. The lights are off on both and when I press either all of the other lights turn blue or red.

If you have no control at the dispenser, you will need to replace the HV control board. Here is the board to order.
Once you replace the board it will need to be programmed. The Program Code is located on the Serial Plate on this unit after the word Code.

NOTE: This
is a multi-solution answer since I don't have all the tech from your question to pinpoint your problem
But the solution is in here generically, if you read and study the solutions very, very carefully.
Check Temp inside freezer. It has to be down to about 10 or 15 degrees
This can cause slow ice making if its too high even tho its freezing everything else at 25 degrees
See if water is in icemaker.
Pour water in Ice Maker and wait to see if it ejects.
If it ejects thenyou need to replace water valve in rear bottom of fridge(Its the part that
attaches to water line out of wall)
If it doesn't eject then it is a faulty Ice Maker.
If its leaking or no water at icemaker or door either one, then the valve at the rear bottom of ref needs replacing
First I would check the fan in the freezer. Listen to see if it is running
It moves air to the ref from the freezer
Then check to see if freezer control is turned WARMER, which makes the Ref. colder
Also if it is getting drinking water to the door but not to the icemaker (or vice versa) Then you need to replace
the water valve at the bottom rear of the fridge. It is a double valve and one side is not working
Also this might be a common Defrost problem, Ice
is not being melted by the defrost system. The fan can't blow through the coils into the fridge.
Take out back panel of freezer to check for ice buildup. The coils should be clean.
There are three components to a defrost system- a heater, heater thermostat, and a timer unless you have a defrost electronic card.
Its best handled by a Technician but you could possibly do it by taking your model number to the nearest appliance parts store and asking for the parts. They are mostly located in freezer ,behind back panel on freezer coils.except the card which is usually located in ref The parts store will have info
Also check fan undernearh Ref in the rear
Clean condenser coils underneath

How do you change the ice cube setting on the 25cf LG French Door bottom freezer? I cannot see anywere in the manual where it indicates where you change this setting?!

The icemaker requires a water pressure of 1.5 - 8.5kgf/cm2. It is acceptable if the water supply fills a cup of 180cc with water in 3 seconds. The icemaker produces small cubes if the water fed into it is not enough and lumped together if too much water is supplied. In order to obtain the desired size of ice cubes, the amount of water supplied to the ice maker needs to be adjusted. Adjust the valve supplying water to the icemaker or the unit in general in such a way that right amount of water fills the ice tray.

My french door with freezer at bottom ,LG icemaker making very little ice.

Perhaps there is not enough water coming into the tray on each cycle? Are the ice-cubes very thin? If so timer needs to be reset. LG use a 3-switch DIP on a control panel near the main power board. By changing these switches to various combinations of on/off you can change the timing - longer means more water each time (but too much water means overflow into the blocks already made).

There are service manuals that explain what each setting does - but because its near the high-voltage power board, I'd suggest you get a repairman unless you are a good DIY'er

Not getting ice

sounds as if the icemaker is getting too much water and causing the unit to flood out. aside from replacing the icemaker you may be able to adj the amount of water going into the icemaker. there is a screw that holds the front cover of the icemaker inplace. remove the cover and you should see a screw  with a + and - sign on it. try turning the screw 1/4 turn then wait for the icemaker to cycle and see if it improves. keep making theses adjustments until your problem is solved thx peyton
