Use one tablespoon less liquid on next loaf....if it still falls use 2 tablespoons less on the 2nd one...that ought to do it.

Still waiting for answers to bread falling in middle of loaf in Black and Decker Bread maker when bread rises to the top of bread maker Is there too much flower or yeast?


use 2 tablespoons less liquid in a 2.0 lb. loaf, 1.5 less in a 1.5 lb. loaf and 1 tablespoon less with a 1.0 lb. loaf.....start there and let me know what happens

The bread starts rising and than falls in the middle in the last 20 minutes of baking. What is wrong?


Rising bread is caused by carbon dioxide bubbles being created in the bread by the action of yeast on the sugars in the mix. If the rising stops early, allowing the bread to fall it could be one of several things that cause the carbon dioxide bubbles to stop pushing up the bread. Any of the following could be the cause:
- insufficient sugar in the mix to feed the yeast.
- sudden drop in temperature, slowing down the process, maybe caused by opening the lid to check
- mixture that is so thick that the gas production struggles to overcome the elasticity of the dough
- try adding a little more water, or more sugar, or changing the flour. Avoid opening the machine to check on progress.

The dough will not raise no matter how fresh the yeast


Check the type of flour you are using. In the US, if you are using white flour you need to select the type that is labelled "for bread". Also, do not open the lid while the bread is supposed to be rising or you will make it fall. It needs to have a steady temperature while it is rising. Also, make sure that the measured quantities are quite precise. The heavier the ingredients the harder it is to make the dough rise. Adding a little extra water can help.

I am using the old recipe from my 20 year old Black and decker book, in my new new B & D bread maker and it falls flat on top? In the old machine it rises beautifully and stays there, why? new bread...


You may find that one machine (the old one) stipulates Active Dry Yeast and the other one (new) stipulates Rapid Rise Bread Machine Yeast. What are the main differences from your old recipe and a similar recipe in your new recipe?

At 17 minutes bread rises well but the bread is not done because the edges are only a little brown, but at 20 minutes the bread always falls!


Check the manual of your oven (ESPECIALLY FOR BREAD MAKING) you probably do not have the correct programming, when the bread FALLS it means that the heat (microwave) kick's in too abruptly (NOT LIKE IN AN CONVENTIONAL OVEN) graduated...

I'm not an expert just a suggestion...

use less yeast . bread falls when the air bubbles are to big . yeast make the bubbles there is a fine line between to little yeast and the bread not riseing and to much and the breat riseing too much and then falling ........i have a recpie that calls for two teaspoons and i use only one ........its that far off !

Bread is falling during baking


I had this same problem. It has to do with the amount of water and the amount of yeast you are using. I decreased my amount of water to 1 cup ( of course it depends on your recipe) and I also was using rapid rise yeast which calls for a less amount (usually 1/2 tsp less than what the recipe calls for). I did experiment with the recipe until I got it just right. Good luck. Carrie

Try using a little less yeast or slightly more flour. The dough is either not quite stiff enough or slightly too much yeast.
