More than likely you have a bad Oven Temperature Sensor (probe). Depending on your model it is probably around $20 -$40 for the part and about 30 minutes to an hour to replace. Usually a pretty simple fix!

So this is acting like a temperature sensor and it seem that is giving wrong indication to the control panel and switch off the heater at wrong temperature.
So you should replace the thermister.
