Hi. Have just bought one at a second hand shop and tried to make the Lemon Sorbet. Ing: 300ml lemon juice, 100g sugar, 1egg white and water. HOW MUCH WATER Please.

Lemon Sherbet Ingredients

  • 2 egg whites
  • 3 - 4 cups (500-750 ml) lemonade
  • sweeten to taste
Instructions Beat egg white until foamy but not dry. Mix in lemonade and sweetener and pour into Donvier. Freeze to desired consistency.

How many cups is 100g of caster sugar?

100 Grams of caster sugar should be exactly 2 cups.

Here is a link to a fantastic website, you just choose the sugar and the measurement you want to weigh in, in the case grams and it tells you exactly how many cups. It has saved me a few times!

I am out of cream of tartar what do I use in it place?

For beating egg whites - use an equal amount of white vinegar or lemon juice, or omit the cream of tartar entirely

As a leavening agent - replace the baking soda and the cream of tartar in the recipe with baking powder. One teaspoon of baking powder replaces 1/3 tsp of baking soda and 2/3 tsp cream of tartar

Possibly the function of cream of tartar in ice cream making is to stablise egg whites so the ice cream is similar in texture to whipped cream or meringue so you might try "use an equal amount of white vinegar or lemon juice, or omit the cream of tartar entirely". Have fun experimenting !

You need a good simple recipe. So here is one.
(This is an unpasteurized recipe unless you boil the blended strawberries, wash the berries very well if you don't)

1 lb fresh strawberries (ripe is better)
3/4 cup sugar (most folks double this but i prefer the taste of strawberry)
3/4 cup whipping creme
2 1/4 cups milk (2%)
1 tsp lemon juice

Liquefy the strawberries in your blender. (Boil now if pasteurizing) and add the rest of the ingredients and blend.
You now have enough Ice cream mix for two partial batches. Divide mix in two equal portions. You should have enough to fill machines bucket 1/2 - 2/3 full.
IMPORTANT
Do NOT have more or less in the bucket as the machine screws up with more or less of any mix.
Insert Paddle and put noisy grey power arm on top.
Add a 2 inch thick hardcover novel on top of arm above bucket.
Add a heavy Soup can on top of this book (I recommend Habitant French Canadian Pea Soup 28 fl oz size).

Set timer to 40 minutes.
Leave room as it is a noisy little beast machine.

Come back and check just before it is done. If still too liquid add 5 minutes to timer.

Empty into bowl and add 2nd half of mix to bucket.
Clean the dimple on bottom of mixer paddle before putting back in bucket. This batch should take 5 minutes less as compressor is already cold.

Have fun.

The book and Soup can are essential to keep the silly beasts power arm from lifting up too early.

I have the machine but not the manual that goes with it.

Things You'll Need:
  • Fruit
  • Blender
  • Vodka
  • Lemon juice
  • Sugar, honey or agave nectar
  • Ice cream maker or freezer
  1. Choose your fruit or even blend more than one kind of fruit. As a general rule, it is best to use juicy, pulpy fruit, such as watermelon, mango or strawberries; however, you can add a splash of orange juice or even throw in banana for extra cream. Blend your selected fruits well in a blender.
  2. For every 2 or 3 cups of blended fruit, add 1 Tbsp. of vodka and 2 Tbsp. of lemon juice. If you are serving sorbet to children or cannot consume even these small amounts of vodka, simply replace with lemon juice; however, know that you will not be able to taste or feel the effects of vodka in your finished product.
  3. Blend sugar into the mix; however, add just a spoonful at a time, tasting until you reach your desired level of sweetness. As an alternative to sugar, you can use honey or even agave nectar.
  4. Place your mixed sorbet in an ice cream maker to freeze for the creamiest results. If you do not have an ice cream maker, simply place your sorbet in the freezer for a few hours; however, sorbet will be a bit harder in texture but just as tasty if frozen in the freezer.

Sorbet not freezing

If it is not freezing, I would suspect you didnt use enough salt. Salt melts the ice and makes the water colder. You need lots of ice, the finer crushed the better, and salt. Do not bleed off the cold water, that is where the action is.

2) Use filtered water
3) Replace the charcoal water filters every 3-4 mos
4) Use better coffee

First use - it didn't freeze

Try lowering the temperature of your freezer a few degrees. I had the same problem and this solved it.

Its not working!

Here is the link to the manual if you need it; http://www.cuisinart.com/share/man/423_man.pdf It sounds to me like everything should work, but you put something in the ingredients which affected the result - salty or hard or softened water might be a problem - also insufficient rinsing of any detergent you might have used. try different ingredients. Also get a thermometer and check the temperature of your freezer - the problem may be that the freezer is only hitting a couple of degrees below zero celcius. about -8c or more should be enough for your ice cream maker, more is better for your frozen food check your freezer manual for details - please post again if you need this. Hope this helps :)
