I don't know what's best to clean the SS grates, but I wait until I fire it up the next time to use a brass brush on my porcelin coated grates. This is mostly because when things are done cooking, I have my hands full carrying and serving things.

As far as the temp not dropping when you turn the heat down, this simply means that this new outdoor oven you bought retains heat well. This is a good thing - and having the temp fall when you open the hood shows this as well.

My Bar B Chef grill grates are totally rusted. Are stainless steel grates better or should I stick with cast iron?

I prefer cast iron. Cast iron heats more evenly and retains temperature better. If they are falling apart from rust, junk them. If they just have surface rust and no holes, all you have to do is brush them with a steel brush at high heat. Wipe them off with a wet rag and then rub it with an onion to provide a teflon layer. if it is really heavy rust, spray oven cleaner on them and hose off. After use or for storage, clean them and then wipe them down with a cooking oil soaked rag. The oil will reduce rust build up.

Sorry, we don't sell anything on FixYa. However, if you get the dimensions of the grate you needand search around on Google for some the Grill Parts & Accessories sites and you're more than likely to find what you need. I will caution you, Stainless Steel Grates are expensive. Plus, they do not do well with charcoal. The charcoal gets so hot against, that it will pop and pit. It's not like doing it on a gas grill, where the heat is moist and the stainless retains it's integrity. Unlike coal or charcoal, which is an extremely dry heat. You may be better off with Cast Iron. Once it's seasoned, it should do better than Stainless Steel.

Clean stainless steel grates with wire brush

wire brush, heat up grill to warm and clean with wire brush. After you get the built up food and grease off remove grates and clean with soap and water to finish the job.
