There are 2 things that come to mind that can cause your issues.

1. Idle air control sensor. This can cause bad air/fuel mix ratio. ( bad idle, slow acceleration )

2. Throttle position sensor, ( TPS), This can cause a bad idle and slow acceleration.

if it accelerates when you choke it then its not getting enough fuel. check fuel pressure and volume.

Your engine probably has an automatic choke device that adjusts automatically with engine temperature. To set the choke when the engine is cold you have to depress the accelerator to the floor and release it completely. You shouldn't have to depress the accelerator again to start the engine, turn the key the engine should start. As the engine begins to warm up it will also begin to initially run faster then it will start to run rough. At this point you have to press the accelerator and release it again. The auto choke mechanism should allow the choke butterfly to open. There may be a number of stops in the system and the choke butterfly will stop again still not fully open and only become fully open when the engine is at operating temperature. Yes, spring may have broken or maybe it just needs adjustment. There is a high idle cam that makes the card idle higher when the choke is closed or partly closed.

The catalytic converter may be clogged which chokes out the engine when it cannot release the exhaust pressure.

Accelerator stuck

Hey. do you have an automatic choke on the car? If so, it could be that the automatic choke is stuck in the open position. You could trace the the accelerator cable to see if it`s getting stuck. I had this problem with the automatic choke on an Escort Ghia once and then installed a manual choke instead.
