From 1-7 on the coffee grinder, which is the finest grind.I Hve misplaced my manual

I have my grinder setting on 2 and the amount on the ++++ side but still have coarse ground coffe that's more like tea. I have cleaned and lubed the machine well including the grinder (cleanded all the grooves out with a toothbrush) but continue to have the problem. Close inspection reveals no obvious problems.

If the grinder is spinning your grind set is too fine. Push the lever below the bean hopper to the back. It can go to a coarser setting anytime but the grinder has to be spinning to make it finer. They may not have set the grinder correctly. Have them walk you through the process. It also takes about 2 to 3 times before the grinder fills to work.
If you leave the machine for a while, the residual ground beans in the grinder stick and clog the grinder.

After taking apart the grinder and cleaning it out, it still didn't grind. -
Then we ran some ground beans through it a couple of times, and then put fresh whole beans on top of the preground, and it took.
I don't know what you mean by disarming the grinder. Unless you are talking about using the bypass.
If that is the case there is a button on the panel that has waht looks like a scoop. Push that button and put a scoop in the bypass door and then push the button for what cup size you whant.
Regarding the taste of the coffee. It may need a cleaning and service. Try googling "saeco repair" and find an authroized Saeco repair center and have a good service done on it.
