I have figured out that I can have multiple tuners and record from multiple channels. However, I cannot establish if I could do the same with 2 HDTV tuners (ideally, one for off the air and another from cable/satellite).
Sorry, but MCE 2005 only supports a single HDTV tuner, for "over the air" only. We're hoping the next version will support cable HDTV but the problem with that is that cable companies don't really want those recorded. We've seen rumors that future versions might support "cable cards", in which case HD over cable should be possible.

You can actually record from a Firewire enable cable box into WIndows XP(just not the MCE interface yet) I use a program called CapDVHS, it is an "emulator" of a DVHS deck, so it saes teh files as MPEG transport streams. They play back fine in WMP10 in Xp.
Apple actually provides this functionality in OS 10.3(Virtual DVHS), I believe MythTV is the Linusx version that you were talking about. These 2 programs actually allow you to control yoru calbe box, whereas CapDHS just allows you to capture the stream from teh cable box.
