Sounds like you flat out need a new dock connector cable, which connects all the problems you're having. That single ribbon cable connects the microphone, dock port and the speaker, and also goes up to charge the battery through the logic board of the phone. it's not an easy self repair either, because of the microphone and speaker being soldered to it with tiny connections :( I had the same problem with mine and switched the front half of a different phone with mine that had a working dock connector and it solved my problems.
