regarding the problem with your bread machine where the bread is right to the top of the machine and wet on top. That means that you have used too much liquid. Another sign that you have used too much liquid is that it gets to the top of the machine and then kind of collapses in on itself. Use less liquid next time and about halfway through the first knead look at the dough. If it looks like batter (damp, sticky, smearing on the bottom and under the paddle) that is a sign that you still have too much liquid. But during the knead is when you can correct that. Just add one tablespoon of flour. Your dough will slowly pick it up and form itself into a ball. That is what you want. Good luck and happy bread baking!
