It is wet on top of the bread because of condensation that is collecting on the inside of the lid.

You have "crater bread" ?
I suspect your final mixture is too wet. Reduce the amount of liquid in your recipe. The bread should stay firm and risen.

When my machine goes into the next to the last rise I have a loaf about 5' but then when it goes into the last rise before it bakes it never rises high again. The finished loaf is about 3 1/2" high....


Not fully understanding this but it sounds like you are opening the lid too much and spoiling the rise. Only open the lid when at the dough stage if necessary.
Bread will not keep warm, it will steam and go wet and soft in the pan. Open the lid when the cycle has finished and remove the loaf.
Try re-setting your machine by holding down the start button till the display goes out.

Hi, a common mistake that people make using bread machines is to use the wrong kind of flour. If you are using all purpose flour it will not perform well. You need to use flour marked "bread flour" on the bag. Also the yeast and water have to be at the right temperature. Your machine is too warm while the dough rises. No adjustment possible. You can add a bit of Gluten to your bread or buy flour for bread making instead of general purpose flour. Most white flour has gluten reduced during processing.

Julie Childs book, "the way to cook" has a nice write up on gluten in European flour vs. the general purpose flour we commonly buy in the US.

Hi,
Add the wet ingredients first... then the flour...then put the yeast on top of the flour so it does not touch the wet and start proofing and rising. Seems it rose most of the night. Use instant yeast so you don't have to proof it. Just an idea :)

Hi,
Empty the bread pan and clean it out. Put the pan and paddle back in the machine but do not add ingredients. Start the bread cycle and look in the window (or lift the lid) during the mixing cycle. You should see the paddle spinning around.. If not you probably need a new belt.

Sanyo Breadmaker will not finish the baking cycle.


The manual just say that an error E:05 is a bread maker malfunction and you can't fix it but must get it serviced.

Here is some operating instructions one baker used for this machine;

But here's how to actually use it:

Put wet ingredients in loaf pan. Heap dry ingredients on top. Make a well in dry ingredients and add yeast, ensuring it doesn't touch liquid if you want to use the timer. Put pan in breadmaker, clicking into place.

Plug in breadmaker but DO NOT touch the on/off button till the very last.

Using the "menu" button, choose what type of bread you're making (the top two rows -- normal, fruity etc).
Using the "crust control" select how dark you want your crust.
Using the "timer" select how long till you get the finished product. The minimum is 3 hours for quick bread/medium crust, which I often use, the maximum 14 hrs 30mins. It goes up in 30 minute increments with each push of the up arrow. Remember, what the timer shows is when the finished bread will be ready.

Once you're satisfied with your settings, press on/off

If you choose "fruity bread" the timer will beep into the kneading process to tell you it's time to add the fruit. It goes in at a later stage.

When the bread is finished, it will keep on a warm cycle for a while until you switch it off.

I use high grade flour and add 1 tsp gluten flour to each cup of flour. The bread rises more.
