Here are the colors for the radio harness on your '91 Escort.
1991 Ford Escort Radio Color Codes
Battery Constant 12v+ Wire: Blue/Red
Accessory Switched 12v+ Wire: Blue/Black
Ground Wire: Black
Illumination Wire: Red/Black
Left Front Speaker (+): Violet
Left Front Speaker (-): Blue/Orange
Right Front Speaker(+): Blue/White
Right Front Speaker(-): White
Left Rear Speaker (+): White/Blue
Left Rear Speaker (-): Red/Blue
Right Rear Speaker (+): White/Green
Right Rear Speaker (-): Blue

Here's a link to the manual. The wiring color code for the supplied harness is on page 78. The diagram is rotated 90 degrees clockwise. I recommend that you download the PDF and print out the page you need.
