That is a very common problem and here is a step by step solution. Press the little button on the Xbox 360 with a wireless sign on it. It's on the front in between the memory card slots and the power button.
After you've done that the Xbox lights should go like around in circles.
Hold the button with the same picture on it on the Guitar controller its on the edge near the LAN port and microphone port
Then they should sync Happy Gaming to you.

The PS3 turning off with a flashing red light means that the console is overheating.
Make sure the fan (which is at the back) is not blocked by anything, the room your in is ventilated and the PS3 isn't in direct sunlight.
If this still doesn't work then you can buy a more powerful cooling fan for your PS3 or i've heard just aiming a battery powered handheld fan at the back of the PS3 works
