Hi and welcome to FixYa, I am Kelly. I had to do a reverse lookup of your model number and think I am close with this model number: 106.72102100 and can be found using the website. Your defrost timer is item 4 of this link:
detailed view:

It should automatically cycle your refrigerator into the defrost mode as often as 3 times a day. When the defrost timer or the defrost element (item 4 this link:
fails you will have to do a manual defrost. In addition a failed bi-metal thermostat (item 2 same link) can also cause the unit not to cycle out of the defrost cycle once it begins.

You can manually rotate the defrost timer using the 2 tabs if you kneel down and look into the overhead of the fresh food compartment. You will see a circular hole with the inclined tabs on it. Rotating this SLOWLY until the compressor shuts off or you hear a noticable click will start the defrost cycle. (Due to the inclined tabs you can only rotate it ONE direction.) The defrost cycle should self terminate after abiut 45 minutes. If it does not self terminate that indicates a problem with one of the 3 main defrost components. Timer, element or bi-metal thermostat.

Thanks for choosing FixYa,

Why does The freezer side stays cold but the refrigerator side gets warm

Your problem is more than likely a defrost issue. There is ice building up in the freezer coils and when it gets blocked with ice the cold air cant blow into the fresh food section. When you shut it off the ice melts and it gets cold again for a few days. remove the freezer back panel and check the defrost heater and defrost thermostat. if they check OK then check the defrost timer. It is best to replace all three components at the same time. This way you will be starting out with new components rather than one failing then the other.

Every 3 weeks the freezer ices up on back wall and the fan isn't able to circulate the cool air. i defrost it and then the unit works perfectly for about three weeks and it happens again.

You have a problem with the automatic defrost system. It could be the defrost timer or defrost heater or termination theromstat. You woulld have to check them to see what part is bad. Hope this helped. I don't know if you have the knowledge or the tools to repair it yourself or if you need to call repair tech.

After defrosting the freezer, both the freezer and the refrigerator side work great for about 2 weeks. Then the refrigerator side will not cool below 50 degrees. If we shut it off and let it defrost...

Old fashion ice box's had to be defrosted by hand like yall are doing now. Apparently the defrost timer, the defrost heater, or the defrost termination thermostat has took a dump. It takes about 2 weeks for every thang to clog up in a evaporator.
I wrote a tip about it and included links to service manuals HERE

After 1 or 2 weeks the refrigerator stops working, it freezes up. After defrosting, works perfect for 1 to 2 weeks again

Defrost heater bad, defrost thermostat bad or Defrost timer. Defrost heater and Thermostat can be continuity checked. Defrost thermostat can only be checked if at freezer temperature. Both should show continuity if good. If those two test good the process of elimination means it's the defrost timer. Always unplug refrig when performing these checks

My Norcold DE0051 I have to keep defrosting every 2 weeks

Occasional defrosting is needed on these units. 2 weeks isn't that bad considering the environment that it is in (your boat). Every time that you open the door, moist air enters the fridge, and the moisture eventually collects on the freezer plate, and freezes. Putting foods into the freezer that are uncovered also contribute to this a great deal, as do putting in warm / hot foods before giving chance to cool down.

These freezers do not have automatic defrosters. The target environment typically has limited power available. Automatic defrosters would easily double the power requirements.

You can also check the door seals on your fridge as well. If they are not sealing properly, they can also let in humid air which then causes moisture to collect on freezer plate.

Because you mentioned that last week you had an ice problem I need to ask was anything done to fix or check the defrost system? The number one reason for this is the Adaptive Defrost Control part number 61005988 If this is OK then we need to check the defrost heater and defrost thermostat. The ADC is located inside the fresh food compartment and behind the control panel used to adjust the temperatures in the freezer and refrigerator. I will be here if you need my help, Thanks, Sea Breeze
