Do you have the gas range?
Figure below shows the probe clipped under the grille. You remove the grates and grate supports, then lift the grille a few inches to access the probe. Before removing, note the position and orientation and make sure to put it back the same way.

I have a viking 48 inch Professional model range and oven. I need to replace the thermostat under the griddle. How do I access the tempurature probe that is under the griddle. I have to replace the whole assembly because of a broked stem on the knob.
This appears to be the information I needed. I believe it will help me immensely. Once I have attempted repair I will respond again. Thank you for your advise.
